Veggie Noodles


If you follow a plant-based diet, it’s hard or expensive to get whole-grain pasta and noodles. The generic box of “whole wheat” pasta is usually not as great as touted, and truly whole grain pastas like rice or quinoa are pricey. So, a great alternative is veggie noodles! With a spiralizer (or even just a peeler) you can make “noodles” out of zucchini, sweet potato, carrots, and more! Each compliment different flavors and have different textures, with sweet potato being the most durable and zucchini lighter. I’ve posted a bunch of noodle-based recipes below with different types, try mixing and matching certain veggie noodles with these recipes!
